You first meet him in Chapter 1, if you take the premium scene where you go fetch rum for the crew with Charlie. Maggie introduces him as the ship's cook, and he asks you to try his newest dessert. If you tell him that it is nasty, he appreciates your honesty. If you tell him that it's very unique, he appreciates your kind words.
He also supports you during your trial in Chapter 2 and believes that they need all the help they can get.

Maggie and Henry joined the Revenge almost the same day. Henry said the first thing she did was criticize his cooking, but she argues that she only said his galley could be more organized and with an organized galley, his cooking would taste even better.
